Tuna and Pasta Salad with Tomato and Green Chilies and Olives

Another easy to make anytime dish good warm or cold.  Like my other recipe for tuna and pasta you can substitute chicken if you’re not a fish person.  There are no set rules, add items or delete what you don’t like, it’s a recipe not a blueprint for a rocket.  I always keep a number of these items in the larder in case I need to make a quick dish to fill in for lunch or dinner.  Any type of shaped pasta will work elbows, shells, orecchiette, small penne.  The only real musts are make sure you have a good italian dressing ( for this one I like to use Wishbone).

Ingredients for Tuna and Pasta Salad

  1. 1 -2 large cans Tuna or Chicken
  2. 1 red onion diced
  3. 1 small can green chilies diced
  4. 1 cup green olives chopped
  5. 1-2 tomatoes diced or 1 can diced tomatoes drained
  6. 1 recipe of Good Seasons Italian Dressing
  7. salt and pepper to taste
  8. Parmesan cheese to taste (optional)
  9. 1 box shaped pasta

Directions for Tuna and Pasta salad

Boil the pasta in salted water, once done, drain.

Prepare all the rest of the ingredients and putting the pasta into a large bowl to mix, add the rest of the ingredients and combine thoroughly. If making it ahead of time make sure you have extra dressing to moisten the pasta before serving.

Oh well another of those recipes that really aren’t pup friendly.  Too many onions and spicy stuff for me, I can’t even get a taste, but surprisingly it does smell quite good, so 3 paws, and let’s hope there is steak for dinner!

Bow Tie Pasta with Ham + Peas

One of the great things about a baked ham is the leftovers.  So many choices of what to do, so many great recipes.  This one is a classic just a few ingredients simple to make, you can even do this all in one pot, so there’s less work for the scullery maid.

Ingredients for bow ties with Ham + Peas

  1. 1 12 oz or larger box of bow tie pasta
  2. 1 medium onion diced
  3. 2 cloves garlic minced
  4. 1 -2 cups frozen peas
  5. 1 – 2 cups Diced ham
  6. 2 cups cream
  7. 3 Tbs butter
  8. 3 Tbs flour
  9. Parmesan cheese to grate over dish
  10. salt & pepper to taste

Directions for Bow Tie Pasta with Ham+ Peas

In heavily salted water cook the pasta.

While the pasta is cooking prepare the other ingredients.  Dice the onion, garlic in one bowl, the ham in another, and measure out the rest of the ingredients.

When the pasta is cooked to your preference drain in a colander.  Put the pot back on the burner on medium high heat add the butter when melted add the onion and garlic and cooked until softened.

Once the onion and garlic are softened, add the flour and stir until all the raw flour is combined, continue to cook for a minute or two more.

Add the cream and whisk until sauce begins to boil and thicken.  At this point add the peas and ham and cook to heat.  Once the ham and peas are heated, add the pasta back into the pot, stir to combine all the ingredients.  Taste and adjust the seasoning at this point.

Serve with Parmesan sprinkled lightly over the pasta.

Macaroni Salad

What can be more American than macaroni and cheese, I thought?  So it was a simple stretch to make a great picnic side dish Macaroni salad with cheddar cheese and diced bell pepper.  Simple easy to make and will feed lots and lots of hungry BBQer’s.

Ingredients for Macaroni Salad:

  1. 1 lb. elbow macaroni cooked and cooled
  2. 4 cups sour cream
  3. 2 cup mayonnaise
  4. 3 tbs red wine vinegar
  5. ½ cup shredded cheddar cheese
  6. 1 bell pepper finely diced
  7. salt & pepper to taste

Directions for Macaroni Salad:

Cook the macaroni and drain and let cool slightly.

In a large mixing bowl add the sour cream, mayonnaise, vinegar, cheese,bell pepper & salt & pepper.  Add the slightly warm  macaroni and mix completely.  Taste and adjust seasoning if necessary. If making far in advance you may have to add a little bit of whole milk to keep it moist, as the sauce will be absorbed by the macaroni.  Add the milk a little at a time until the macaroni is moist but not really wet as too much milk will dilute the sauce too much.
