Salmon Mousseline & Lemon Dill Sauce

The last time my son came down to visit we had a very nice salmon steak dinner.  The tail ends and other bits of the fillets that I didn’t use I froze for another time.  Last night was the “time” and I went with a Salmon Mousseline.

Ingredients for Salmon Moussline

  1. 10 -12 oz skinned salmon
  2. 1 cup Heavy Cream
  3. 2 eggs
  4. 1 shallot diced
  5. 1 clove garlic diced
  6. ½ tsp dill weed
  7. 2 dashes Tabasco sauce
  8. appox ½ tsp salt & pepper

Depending on what you are going to use the Mousseline for, will determine which ramekin or terrine size you will use.  For this recipe, as a main course, I used 2 5 inch X 2½” deep approximately 2 cup ramekins.  They need to be well buttered with parchment on the bottoms.

Directions for Salmon Mousseline

Preheat oven to 375°

Take the salmon and in a food processor with a steel blade chop for a few seconds.  Add the dill, Tabasco, egg, shallot,  garlic, and salt and pepper and chopped again for a few seconds.  With processor running add the cream until all is combined and forms a paste.  Put into a  bowl and put into the refrigerator for about ½ an hour.

Take the well buttered and parchment lined ramekins and divide the mousseline between them.  Place into a baking pan, place pan onto a center rack in the oven and then pour boiling water to come up 1/3 of the sides of the ramekins. Depending on the size, bake anywhere from 20 – 60 minutes ( appetizers size will take about 20 minutes and larger terrines and ramekins can take up to an hour).   To check place a toothpick into center and if  liquid comes out, continue to cook..  You can take out of the water bath and bake on rack for the last 5 – 10 minutes.

Ingredients for Lemon Dill Sauce

  1. 1½ cups of milk
  2. 4 tbs butter
  3. 4 tbs all purpose flour
  4. 1 shallot finely chopped
  5. 3 tbs fresh lemon juice
  6. zest of ½ a lemon
  7. 1 tsp dill weed
  8. salt & pepper

In a sauce pan, place the butter over medium heat and add the shallots and cook until the shallots are softened.  Once the shallots are softened add in the flour and cook until all the flour is combined, continue to cook for a few minutes to cook out the raw flour taste..  Add in the milk and bring heat up to high, while continuing to stir to keep from burning.  As the sauce begins to thicken add the zest , the juice , salt & pepper and the dill.  continue to cook and stir until sauce thickens . Remove from heat and place in a gravy boat, and serve.

BBQ Pork Loin with Coca Cola BBQ Gravy

A few years spent in North Carolina introduced us to a number of different ingredients to use in recipes such as potato chips and Coca Cola.  So as I was pondering what to do with the pork loin last night I thought back to that time and came up with this BBQ gravy that came out quite nice.

Coca Cola BBQ Gravy

Ingredients

  1. 1 cup ketchup
  2. ½ cup Coca Cola
  3. ½ cup brown sugar
  4. 2 Tbs Lea & Perrins Worcestershire Sauce
  5. 1 shallot finely diced
  6. 1 clove of garlic finely diced
  7. 2 -3 dashes Tabasco sauce

In a sauce pot place all the ingredients and bring to a boil, stirring to keep sugar from burning.  Once a boil is reached remove from the heat and set aside.

BBQ Pork Loin

  1. 4-5 pound Pork loin
  2. 2 Tbs Flour
  3.  2 Tbs 1/2 & 1/2
  4. Lawry’s seasoning salt and pepper

Take a pork loin season lightly with Lawry’s seasoning salt, and pepper on all sides.  Brown lightly on all sides.

Once browned, place in the slow cooker and pour the BBQ sauce over it, turn to cover, place lid on and cook for about 4 hours basting the top with the sauce every 15 minutes or so.  Just before serving, remove the roast from the pot turn heat up to high, and in a small container or bowl take 2 tablespoons of flour and 2 tablespoons of ½ & ½ and mix thoroughly and pour into the BBQ Sauce in the slow cooker  and stir to combine and thicken.  Slice the roast thin and serve the gravy on the side

Ingredients
  1. PORK LOIN
  2. Pork loin approximately 3 -4 pounds
  3. Lawry's seasoning salt
  4. Fresh ground pepper
  5. 2 Tbs flour
  6. 2 Tbs 1/2 & 1/2
  7. COCA-COLA GRAVY
  8. 1 cup ketchup
  9. 1/2 cup coca-cola
  10. 1/2 cup brown sugar
  11. 2 tbs Lea & Perrins Worcestershire Sauce
  12. 1 shallot finely diced
  13. 2 - 3 dashes Tabasco sauce
  14. ROUX
  15. 3 tbs butter
  16. 3 tbs flour
Instructions
  1. In a sauce pan place all the gravy ingredients and bring to a boil, stirring to keep the sugar from burning. Once a boil is reached remove from the heat and reserve.
  2. Take the seasoned pork loin and in a fry pan brown on all sides. Once browned place in the slow cooker pour the gravy over it and cook on low for 4 hours basting every 15 - 30 minutes. Prior to serving remove roast and turn heat up melt the 3 tbs butter add in the flour and mix to combine. Once the gravy is heated add the roux and stir to thicken. Slice the roast and put the gravy in a serving boat to serve on the side.

Moussaka a very interesting dish that does take quite a lot of work to make, but the results are certainly worth it.  My version doesn’t have a lot of layers.  There are probably a million variations on this theme with multiple layers and different ingredients.  I like this one as it makes a complete meal; meat, vegetable and potato all in one.

Ingredients for Moussaka

For the Meat Layer

  1. 1 lb of ground lamb ( you can substitute any kind of ground meat you want)
  2. 1 Onion diced
  3. 3 or 4 large garlic cloves finely diced
  4. ½ tsp allspice
  5. ½ tsp cinnamon
  6. 1 tsp ground black pepper
  7. 1 tbs oregano – dried
  8. 3 or 4 tbs tomato paste
  9. 1 cup good red wine
  10. Zest of 1 lemon
  11. Juice of lemon no more than 1 tbs

In a “non” non stick frying pan brown the meat moving it occasionally to keep from burning.  When it begins to brown add the onion, garlic, allspice,cinnamon, black pepper, oregano.  Cook until the onions are softened.   Add the wine and deglaze the pan.  Once deglazed add the tomato paste and the lemon and zest, stir and continue to cook until the meat is done. Take off heat and set aside.

Potato and Eggplant layers

Take 2 Yukon Gold or 2 or 3 red  potatoes and slice about ¼ inch thick.  Place them into a pot with boiling salted water and par boil for 5 or 6 minutes.  Drain and run under cold water to cool.  Take 1 or 2 eggplants peel and slice into ½ inch thick rounds, having enough to fill a layer in a 9 X 13 inch baking pan. Either on a grill or in a cast iron pan cook the eggplant and brown on both sides.  Once done set aside.

Bechamel Sauce
  1. 1 large shallot finely chopped
  2. 1 garlic clove finely chopped
  3. 4 tbs butter
  4. 5 tbs flour
  5. 3-4 cups milk
  6. salt & pepper
  7. ¼ cup grated Parmesan Cheese

In a large sauce pan place the butter and shallot and garlic and cook on medium heat until the shallot is softened.  Once the shallot is softened, add the flour and mix until all the flour is combined, continue to cook for a few minutes more to cook out the flour,  then add the milk, raise the heat to medium high to high and stir the sauce to dissolve the roux and begin thickening the sauce.  As the sauce begins to heat up add the salt and pepper to taste and add the Parmesan, continue to cook until sauce is fairly thick.  You want it thick enough to remain on the top of the casserole.

Assembling the Moussaka

Preheat  oven to 350°

In a 9 X 13 inch baking dish place the potatoes in a single layer slightly overlapping to cover the bottom of the dish.  On top of this place a layer of the eggplant.  On top of the eggplant pour the meat mixture and spread evenly over all.  Sprinkle a little Parmesan over the meat mixture.  Pour the Bechamel sauce over  all and sprinkle a little more Parmesan on the top.

Place in the oven and bake for 30 – 45 minutes.  Casserole will be done when bubbly and top lightly browned.

Remove the casserole from the oven and let it rest for about 10 minutes.  Don’t worry, it will still be hot but it needs to come together, if you cut it up too soon after taking it out of the oven it will run.
