Cucumber & Watercress Sandwich

The English afternoon Tea, which most historians credit to  Anna Stanhope the Duchess of Bedford, a lady-in- waitng to Queen Victoria, was a way for her to sustain herself in the time between the noon meal and the fashionably late dinner around 8.

At first having her servants sneak her a light meal, she began to invite people to join her and so the tradition of afternoon tea evolved.  The delicate little bites  and traditions that were attached to them have spawned a whole industry world wide.  The most famous of these little gems is the watercress sandwich, of which there are many versions.  Mine is a simple rendition that I make occasionally to go with soup for a light lunch or dinner.

Ingredients for Cucumber & Watercress Sandwich

These ingredients are for 4 Sandwiches:

  1. 8 slices of bread (Your Choice)
  2. 8 ounces whipped cream cheese
  3. 1-2 Tbs Chopped dill
  4. 1 large English cucumber peeled or
  5. 1 large cucumber peeled and seeded
  6. 1-2 cups washed and dried watercress stems removed
  7. salt & pepper to taste

Directions for Cucumber& Watercress Sandwich

Allow the cream cheese to come to room temperature.  Add the dill and about a ¼ teaspoon each of salt & pepper.  Whisk briskly to combine, taste and adjust seasoning if necessary.

Take the peeled cucumber and on a mandoline slice them as thin as you can without them losing their shape.

Spread the cream cheese mixture over one side of all eight slices of bread.  Arrange the cucumbers by overlapping in rows to cover 4 bread slices completely. Lightly salt & pepper the cucumbers.  Now arrange a layer of watercress over the cucumbers.  Top with the other slices of bread.

For truly traditional sandwich cut the crusts off and then in 4- 6 pieces depending on how big your bread is.  Each section should be a “2 bite” piece.

Marco Polo Sandwich

Like many food items the Marco Polo Sandwich is another of those not quite exact recipes that has been translated into various incarnations.  Many years ago we began a brunch menu in a restaurant I was working at and we served one with three slices of bread with mayo, turkey and jack cheese a slice of bread then a thin slice of fresh pineapple, cut on a bias the two halves were dunked into a waffle batter and deep fried and served with red currant jelly.  It was a big favorite. I have seen various other versions from very simple to quite involved.   My version is a little easier to make and just as tasty.

Ingredients for Marco Polo Sandwich

  1. 2 slices of white bread
  2. Raspberry or Currant Jam
  3. 2 ounces thinly slice turkey breast
  4. 1 thick slice aged cheddar cheese 
  5. 1 thin slice of pineapple (optional)
  6. mayonnaise
  7. 1 – 2 Eggs
  8. 1/4 tsp Vanilla
  9. salt & pepper
  10. 1 Tbs of butter

Directions for Marco Polo Sandwich

Preheat a frying pan on medium heat and add a Tbs of butter just before cooking.

Use enough eggs to make a soaking batter for as many sandwiches as you are making.  For each 2 – 4 eggs add 1/4 tsp vanilla and salt and pepper to season the batter.

Take the bread slices and spread jam on the inside of one slice and mayonnaise on the inside of the other.   Place the cheddar slice on top of both pieces of bread then layer the turkey and pineapple. Combine both halves to form a sandwich.  Place in the egg batter to allow the bread to soak in the egg batter on each side.

Place into the frying pan, cover the pan and cook until lightly browned on both sides and the cheese is melted.

Try serving with maple syrup or dusting the halves with powdered sugar for an elegant presentation.  Spread softened cream cheese on both pieces of bread before the jelly for a truly decadent sandwich.

Grilled Peanut Butter & American Cheese

Grilled peanut butter & American cheese is a delicious gooey treat, great for lunch or a mid afternoon snack. 

Pickings are getting pretty slim as we await to hear if our mortgage is going to go through.  So we’re using up whatever is around, and putting it on the menu.  This was a great calming lunch.

Ingredients for Grilled Peanut Butter & American Cheese

  1. 2 slices white bread
  2. peanut butter
  3. 2 slices American cheese
  4. 2 thin slices butter

Directions for Grilled Peanut Butter & American Cheese

Place  a slice of American cheese on each slice of bread and spread the peanut butter over one side,placing the other slice of bread with cheese on top.

In a hot fry pan melt the butter and spread it around, place the sandwich in the pan and cook until first side is nicely browned.  When browned place second pat of butter in pan and melt spreading around pan, and flipping the sandwich browning other side.

Once browned on both sides, place on the cutting board for a few minutes and allow to cool, so that the Grilled Peanut Butter & American Cheese can solidify slightly.  Then slice and serve.
