Cinnamon Scottish Scones

I found all sorts of different recipes for Cinnamon Scottish Scones on-line .  I tried a few different methods and recipes in developing this blog and this final try came out the best.  The cinnamon mixture for this recipe is enough to make a few recipes, the “filling” will keep in an air tight container in the refrigerator for a few weeks; but once you make this I’m sure you will be getting frequent requests to make more.

Ingredients for Cinnamon Scottish Scones

For the Filling:*
  1. ½ Cup of softened butter
  2. ½ cup dark brown sugar
  3. ½ cup granulated sugar
  4. 6 Tbs all-purpose flour
  5. 2 Tbs Cinnamon
For the Scottish Scones
  1. ¾ cup milk, or butter milk
  2. 1 large egg (beaten)
  3. 2 cups flour
  4. 2 Tbs sugar
  5. 1 Tbs baking powder
  6. ½ tsp salt
  7. 1/3 cup butter chilled cut into small cubes
  8. 1 Tbs shortening- to grease baking sheet
  9. 3- 4 Tbs flour for kneading

* will make enough for 5-6 batches of scones, keep in refrigerator in air tight container

Directions for Cinnamon Scottish Scones

Place all the filling ingredients into the bowl of a food processor and pulse to combine until you have a mixture that resembles a mixture about 2-3 times as thick as  cornmeal with no lumps larger than small peas.  Place in airtight container and hold in the refrigerator.

Pre heat oven to 425º.  with the rack in the cener of the oven.

Lightly grease a baking sheet with the shortening.

In the bowl of a food processor place the butter, flour, sugar, baking powder, and salt and pulse until you have a mixture the consistancy of cornmeal.

Place this mixture into a bowl and add the milk and egg and stir lightly until all are combine thourouhly. 

On a clean work surface place a light dusting of flour and on top of this spoon 2-3 Tbs of the Cinnamon mixture, place the Scone mixture on top of this and top that with another 2-3 Tbs of cinnamon and a light dusting of flour.  Gently knead this mixture about 10 times to combine (the secret to a great scone is to work the dough as little as possible; as the more you work it the tougher the dough becomes).  Form into a ball and cut in ½.  Form each half into a ball and flatten out to about ½”- 1″ thickness.  Cut each round into 6 pieces  and place on the greased baking sheet.  Place into the oven and bake for 12 minutes until risen and cooked through and lightly browned on top.

Place onto a wire rack to cool slightly.

Best served warm with softened butter.

Cranberry Orange Scones

Cranberries, oranges and scones three great tastes, that combine to go together even better.

There are three different ways to prepare this recipe.  The first is with chopped fresh or frozen cranberries.  This will produce a fairly tart scone which some people may not like.  To sweeten it a little, you can cook the berries in a simple syrup until they burst then drain and finish the recipe.  Most likely however for the majority of people using a dried cranberry chopped fine will work best.

Ingredients for Cranberry Orange Scones

  1. ½ cup buttermilk ( you can use whole or half&half)
  2. ¼ cup fresh orange juice
  3. Zest of one large orange
  4. 1 package of dried cranberries chopped
  5. 1 egg beaten
  6. 2 cups of flour sifted
  7. 2 Tbs sugar
  8. 1 Tbs + 1 tsp baking powder
  9. ½ tsp salt
  10. 1/3 cup of chilled butter cut into cubes=5 1/3 Tbs

Directions for Cranberry Orange Scones

Set oven at 425° with the rack in the center of the oven.

Sift  the flour, sugar, salt and baking powder into a bowl.  Add the cubed butter and with a pastry cutter cut the butter into the the mixture until you have the consistency of corn meal.

You can also come into the 21st century and use a food processor for these first steps.  Simply add the dry ingredients to the bowl of the processor and add the butter and with the blade attachment pulse until you have the desired consistency, then place into a bowl and continue.

 Now add the milk, OJ, egg, zest and cranberries and stir only until no raw flour shows.

Turn the dough out on to a lightly floured surface and very gently knead no more than 15 times.

Cut the dough in half and form each half into a ball and flatten out into a round and cut each round into 6 equal pie shaped pieces.

Place on to a lightly greased sheet pan and bake in the center of the oven for approximately 12 minutes until they have risen and are lightly golden brown,

Serve warm.

As a dedicated S.A.P.P. I am a scones purist at heart. Plain with melted butter and a sweet jam are to “die for”.   These will do in a pinch but are appreciated by the 2 legged scotties more than I!  But you can’t beat a scone no matter what for breakfast so 5 paws.

Fresh Blueberry Scones

Blueberries are probably my favorite breakfast fruit, sorry bananas. When blueberries are in season Fresh blueberry scones are my #1 go to breakfast biscuit.

Ingredients for Fresh Blueberry Scones

  • ½-¾ pint of fresh blueberries
  • ¾ cup whole or buttermilk
  • 1 egg – beaten
  • 2 cups all purpose flour – sifted
  • 2 Tbs granulated sugar
  • 1 Tbs baking powder
  • ½ tsp salt
  • 1/3 cup butter = 5 1/3 Tbs- cut in small cubes & chilled

Directions for Fresh Blueberry Scones

Preheat oven to 425°.

In a large bowl combined the flour, sugar,baking powder and salt.  Add the butter and with a pastry cutter cut the butter into the flour until you have a mixture that resembles cornmeal.

Scrape out of the bowl onto a lightly floured surface and very gently knead 5-10 times.

Cut the dough in half and form each half into a flattened round and cut each round into 6  pie shape pieces.

Place the scones onto an ungreased baking sheet, leaving space between each.

Bake for 7 minutes then turn scones over and continue to bake for an additional 5-8 minutes until done and cooked through.

Serve warm with butter.
