Grilled Eggplant Parmigiana

On a recent trip to the green grocer I picked up a very nice large eggplant.  Pondering what to make for dinner , I thought perhaps eggplant parmigiana, but I really didn’t feel like breading and frying the slices.  Looking out the kitchen window I spied the BBQ and thought why not try grilled eggplant instead.  It’s a simple enough dish and it is very easy to prepare.  I have for years peeled my eggplants for all my recipes, but about a year ago I tried one recipe with the skin on and it was just fine, so I leave it on for most of my recipes now,which in this recipe helps to hold the eggplant together while grilling.

 Ingredients for Eggplant Parmigiana

  1. 1 large Eggplant thickly sliced = enough for 2
  2. 2 cups approximate your favorite tomato sauce
  3. 2-3 cups shredded mozzarella cheese
  4. 4-5 Tbs canola oil
  5. salt and pepper

Directions for Grilled Eggplant Parmigiana

Preheat grill to medium high

Slice the eggplant into thick 1/4 inch or more slices and lay out on a baking sheet.  Lightly oil and season with salt and pepper on both sides.

In batches grill the eggplant on both sides until you have fairly good char marks and the eggplant is slightly softened.

Allow the Eggplant to cool a little so that it is easy to handle.In a baking dish large enough to accommodate at least three layers of eggplant, place a little sauce in the bottom of the dish (this helps to keep the finished dish from sticking to the bottom ) now place a layer of eggplant, spoon sauce over and sprinkle with mozzarella, continue to layer ending with a layer of cheese at the top.

Bake at 375 covered for about 30-40 minutes until you can see the sauce bubbling at the edges of the dish.  Remove the cover and baked uncovered for the last 5 -10 minutes to lightly brown the top layer of cheese.

Remove from the oven and let stand for about 5 minutes.  Serve as a stand alone dish or with pasta and extra sauce.

I really can’t get excited over vegetables, other than raw carrots which I adore!  And it was too hard to eat the sauce and cheese around it.  Next time layer it with chicken.  Rule #1 applies- no tasty, no ratey, but everyone else seemed to gobble it up.

Mini Raspberry Turnovers

The turnover is another of those ambiguous terms with no real attributions as to when and where it was first used.  Initially used for small pies wrapped in puff pastry, the pastry being turned over the filling and fried.  Every nationality has their own version some are sweet, others savory and the fillings vary greatly from fruit to meats, empanada, calzone, knish etc.

Although I love Raspberry Turnovers, I’m not really a big fan of puff pastry with foods to be eaten with the hands, the crumbs seem to get every where, and since recipes aren’t written in stone I thought why not a buttery pastry instead of puff pastry and lets make them smaller.

You will need a cookie cutter or something to make about a 4 inch diameter circle or if your geometrically unchallenged cut into 4 inch squares.  If you make them too much smaller you really can’t get enough filling in to make them worthwhile.

Ingredients for Mini Raspberry Turnovers

For the Filling:

If you feel in the mood, find a good recipe for pie filling and make your own, or as I did, just find a can of good pie filling to use.  The only trick is to make sure you get a little bit of the fruit itself into every turnover.

For the Pastry:*

  1. 2 cups all purpose flour
  2. 1/2 cup chilled shortening cubed
  3. 1/4 cup chilled butter cubed
  4. 1 tsp salt
  5. 8-10 TBS chilled water

For the Glaze:

  1. 1/2 cup confectioners sugar
  2. 1 Tbs milk
  3. 1/2 tsp vanilla (optional)

If you do use vanilla it will darken the glaze, use clear vanilla if you can find it or omit for a whiter glaze.

Directions for Mini Raspberry Turnovers

Preheat oven to 425°

Place the flour, shortening,butter and salt into a food processor and pulse to combine.  While continuing to pulse add the water a tablespoon at a time until it forms into a ball.  Roll a piece into a walnut sized ball and if it holds together it is done.

Form the dough into a ball, flatten and cover with plastic wrap and chill for 1 hour to 2 days.

When you are ready to bake, roll about 1/3 of the dough out to about 1/4 inch thickness and cut into 4 inch rounds. Continue rolling and cutting until you have a full baking sheet of rounds.

Place the rounds onto a baking sheet lined with a silpat.  Scoop about a tablespoon of filling (making sure you have a few berries in each) into the center of each round.  Lightly wet the edges of the rounds and fold in half over the filling.  Crimp the edges with a fork sealing the turnovers.

Bake for 18 – 20 minutes until the tops are lightly browned.  Remove them to a wire rack to cool. While the turnovers are cooling make the glaze by mixing the ingredients together, if the glaze looks too thick add a few more drops of milk to thin out. Once the turnovers are cooled drizzle the glaze over them and allow the glaze to dry.

* You can also use a premade puff pastry if you don’t want to make the dough

A delightful buttery crust with an interesting sweet thing inside, certainly fit for a Scottish American Puppy Princess such as I.  5 paws and I hope the next batch is filled with lamb !

FOR THE FILLING

Ham Steak with Cranberry Mustard Sauce

Our local grocery store had a sale on ham steaks, so we picked up a few for the freezer and one for dinner that night.  Checking in the larder I spied a package of dried cranberries, and that got me thinking (always a dangerous thing).

Ingredients for Cranberry Mustard Sauce

  1. 1/2 cup firmly packed Dark Brown sugar
  2. 1 Tbs Dijon Mustard
  3. 1 Tbs white wine or champagne vinegar.
  4. 5 oz package dried cranberries
  5. 1 1/2 cups of water
  6. 2 tbs cornstarch
  7. 2 tsp fresh lemon juice
  8. zest from lemon (optional)

Directions for Ham Steak with Cranberry Mustard Sauce

Prepare the sauce before beginning to cook the steak.

In a saute pan put the sugar,vinegar and water and on medium heat stir until the sugar is dissolved.  Once the sugar is dissolved take the pan off the heat and add the mustard, lemon juice, cornstarch and cranberries and stir to combine and then put back on the heat and slowly bring  up to boil.  As the sauce reaches boiling point it will begin to thicken.  Once thickened place on low heat to hold covered (allowing the sauce to steep brings out the cranberry flavor) and begin the steak.

Cook the steak by what ever method you feel comfortable with.  I like to grill mine on medium high heat for about 10 minutes.

Once the ham steak is cooked , slice into serving pieces and spoon the sauce over it.  Serve extra sauce on the side.
