This is another of our what’s in the freezer cause we didn’t give a thought to dinner recipes.   Luckily we had scallops and they defrost quite quickly.  In this photo we used both bay and ocean scallops but you can certainly use just one or the other.

This recipe will serve 2 to 4 people depending on what you add to the meal.

Ingredients for Easy Scallops and Fettuccine ala Scampi

  • 8oz or more per person Scallops
  • 2 Tbs butter & 1 Tbs Olive oil
  • ½# butter melted
  • 3-4 finely chopped cloves of garlic
  • 3-4 Tbs Capers
  • Juice of 1 lemon + Zest
  • chopped parsley
  • Parmesan cheese (optional)
  • 1# Fettuccine cooked

Directions for Easy Scallops and Fettuccine ala Scampi

In a small sauce pan melt the butter with the garlic, capers and lemon juice and zest.

Start the Fettuccine cooking as per directions on the box.

In a sauté pan large enough to hold the scallops in a single layer on medium heat melt the 2 Tbs of butter with the Olive oil and once hot add the scallops and cook until lightly browned on all sides and cooked through.

There are 2 schools of thought to serving:

  1. In a large bowl place the pasta, scallops, and sauce and mix well and serve.
  2. Allow each person to plate their own pasta and add the scallops and sauce as they wish.

Garnish with the chopped parsley and if you want serve with Parmesan cheese on the side.

The whole meal can be prepared in the time it takes the pasta to cook.

The Best Grilled Tuna Salad Sandwich

A life-time ago I worked for a great restaurant company, that sadly is no longer in business.  This was one of my favorite lunchtime items.  I did modify the recipe slightly to suit my tastes but as with all good recipes it’s just a spring-board for your creative juices to start flowing.

The 12 oz can of tuna will make enough for about 4 sandwiches.  The  bread, butter and cheeses are per sandwich.

Ingredients for Grilled Tuna Salad Sandwich
  1. 12oz can white albacore tuna (drained).
  2. ½  large onion finely diced
  3. 1 Tbs Dijon mustard
  4. 1 tsp pepper
  5. ¼ cup (appox) mayonnaise
  6. 2 slices of Bread
  7. 2 slices of sharp cheddar 
  8. 2 Tbs softened butter
  9. 2 Tbs grated parmesan cheese
Directions for Grilled Tuna Salad Sandwich

In a large bowl place the tuna, onion, Dijon, pepper and mayonnaise and mix completely, breaking up the tuna to small pieces.  Do not add enough mayonnaise to make the mixture very loose, add in just enough to bind everything.

On one side of the two slices of bread, butter them fully and then sprinkle the parmesan cheese on top of the butter and spread it out to completely cover the slice, pressing it into the butter to adhere.

turn one slice of the bread over place a slice of the cheddar on the bread, the spoon out the tuna salad, top with the other slice of cheddar and place the other piece of bread with the parmesan side out on top of the sandwich.

Put into a medium hot large sauté pan or on a grill and cook until bread is lightly toasted on both sides and the cheddar is melting. 

With a sharp serrated knife slice in half and serve.

Grilled Marinated Tuna Steak

This is such a simple recipe with outstanding results everytime.  Grilled Marinated Tuna Steak is one of my favorite fish dishes.  The standard marinade I use is just sliced fresh ginger and soy sauce, or in place of the ginger sliced fresh garlic.  That’s it and the flavors that are absorbed by the tuna make an unforgetable meal.  The one “trick” is not to over marinate; no more than 2 hours, as the soy will start to cook the steaks.

How you cook them is up to you.  Many recipes call for medium rare tuna with the center still bright red, but I like mine cooked through to more medium and uniform doneness.   I have a flat grill for the stove top that I use, but if you’ve got a good fish basket, on the outdoor grill will work just fine.

As for the steaks themselves if you can get your fish monger to cut them to order and to the thickness you want, all the better.

  1. Tuna Steaks 6-10 oz each.
  2. Julienne strips of fresh ginger or garlic
  3. ½ cup good soy sauce
Directions for Grilled Marinated Tuna Steak

Julienne the Ginger, place into bottom of pan that is large enough to hold all the steaks in a single layer.  Pour enough soy to just slightly come up the sides of the steaks, the ginger does not have to cover the steak 7 or 8 slices on each side will work .  Turn once getting some of the soy and ginger on top of the steaks, cover and refrigerate.  Half way through the time you are going to marinate turn the steaks make sure there is ginger or garlic on both sides throughout the marinating process..

When ready to cook, brush off the ginger and place on grill and cook to your desired doneness.

You can bring the excess marinade up to a boil, reduce slightly and serve on the side, or a simple compound butter goes great on top of the steak.

I heard the magic word for dinner tonight-“STEAK” – it did taste a little different but was delicious- I just wonder want kind of four legged mooing animal a Tuna is? Don’t know but I can certainly go for more.  5 paws for sure!
